Places that locals rate highly but tourists rarely find. We surface quality that is not yet crowded, so you can beat the queue and eat where Cypriots actually eat.
A gem is worked out, not chosen. It is a place whose quality signals are strong and whose crowd signals are weak, which usually means locals know and visitors do not.
Nobody can buy the marker. A venue cannot apply for it and cannot pay for it, and it comes and goes as a place gets found.
That is also the honest warning: a gem that gets busy stops being one, so the list is worth rereading before a trip rather than remembering from last year.
